For combined Young Men's and Young women's mutual on Wednesday night we had an Iron Chef Competition. The Beehive's were in charge of the activity so they got to select the secret ingredient which was CHEESE. They had 5 different types of cheese; cream cheese, cottage cheese, cheese whiz, string cheese, and cheddar cheese. Each class was assigned a number, 1-5, which was their order to pick their type of cheese. The Miamaids had last pick and I was worried we'd be stuck with string cheese, but we were left with cottage cheese. We had one hour to go to someone's home, make a dish out of the secret ingredient and return to the church with our creation. We headed to our house and on the way, we were throwing out recipe suggestions, cottage cheese with peaches - no, cottage cheese on a ritz cracker - no,cottage cheese in jello - no... I thought, why don't we try to make a cheesecake out of cottage cheese, BINGO. I found a recipe on the internet and we hurried and put it together. Instead of making a graham cracker crust, we used Nilla wafers and put one inside of a cupcake liner and then we poured in the cheesecake mixture and baked them for 30 minutes. Patricia Manwaring had some strawberries and whipped cream, so we took them out of the oven and headed over to the church with our mini cheesecakes. The Beehives were the judges and we won 1st place!! Okay our competition wasn't the toughest, we beat the Priests, 5th place (string cheese on hotdog buns, gag), the Teachers, 2nd place (mini muffins with cream cheese frosting, good), the Scouts, 4th place (refried bean dip and spray cheese on Ritz crackers, the bean dip tasted like dog food), and the Laurels, 3rd place (layered bean dip and fresh pico de gallo, it was good!) but I was proud of our victory anyway. I unfortunately didn't take a picture of our finished product, but had these two leftover cheesecakes that I dolloped with whip cream. This victory gives me hope that maybe someday I'll win our family Iron Chef competition :)
